It’s the same for cheese and it’s the job of our Cheese Graders to carefully review the end product from batch to batch, day to day and season to season, typically grading 500 samples a day. They remove samples which don’t make the grade and only those that hold the perfect balance of sweetness and acidity, the best of the best, go forward to be packaged as Seriously® Strong Cheddar
